It started in Mikey's kitchen in Amarillo. One craving, one tray, one batch at a time. Friends asked for more. Then friends of friends.
Now we run small batches out of a real shop on South Washington — hand-cutting whole-muscle beef, marinating overnight, and drying it slow until it's right. Not factory-fast. Not corporate.
Eight flavors. One promise: if it doesn't taste like something you'd brag about, it doesn't leave the shop.
